This natural gypsum, also known as calcium sulfate, makes great-tasting tofu, but also has an added health benefit of containing calcium.
What is the difference between gypsum and nigari for making tofu?
Historically in Japan, nigari was used primarily because it produced a better tasting tofu and was also used for making the drink Nigarisu. Gypsum is also widely used because it contains calcium. It is a personal choice which to use, but it is recommended that you try them both to see which one works for you.
