What is the difference between gypsum and nigari for making tofu?

Historically in Japan, nigari was used primarily because it produced a better tasting tofu and was also used for making the drink Nigarisu.  Gypsum is also widely used because it contains calcium.  It is a personal choice which to use, but it is recommended that you try them both to see which one works for you.
