What is matcha and how do I prepare it?

You may prepare matcha in two ways: thick (koicha) and thin (usucha).

• Gather all the essential tools together.
• For thick tea – fill up entire bamboo scoop with matcha
• For thin tea – fill up only half of bamboo scoop with matcha
• Put the matcha through a sieve such as fine wire mesh or container to loosen up powder and break up any clumps.
• Using the bamboo scoop or chashaku, scoop matcha directly from the sieve into a tea bowl.
• Add hot water.
• Using the bamboo whisk or chasen, whisk and stir to create an even consistency.
• Be sure that the tea is clean and matcha is thoroughly diluted.  Make sure that there are no lumps left behind. 
• Serve with a sweet mochi or other sweet alternative.
