Mitoku Nigari is a natural bitterns (coagulant) derived from the Japan Sea. Nigari is a traditional solidifier used in the making of quality tofu. Nigari can also be added to water to make a popular Japanese favorite drink called Nigarisui. As an alternative, you can also make your own natural sea salt derivative such as magnesium chloride.

The Nigarisui drink has been popular in Japan for its ability to help people lose weight, purify the skin, combat fatigue, stress, insomnia, constipation, colds and hang-overs.

How can I make Nigarisui?

To make your own Nigarisui with thse Mitoku Nigari Flakes, simply dissolve 1/4 to 1/2 teaspoon of Mitoku Nigari to 1 liter (33 oz.) of natural spring water and shake before drinking.

Important Tips for making soymilk:

  • Let the temperature of the soymilk fall to about 170-180 degrees Fahrenheit before adding culture or nigari
  • Generally 1/2 tsp (2 grams) is added to 1 liter of milk
  • Allow 10-12 minutes for coagulation to form curds
  • Prepare tofu press and cheesecloth
  • Pour 1/2 solution into tofu press
  • Remove excess water and continue to press down to allow tofu to harden
  • After 1st tofu square is made, pour other 1/2 of solution and repeat
  • Serve hot or cold.
